One in a series of recipe advertisements put out by George Dauth to advertise his 9th Street Market. ⧉

Have butcher remove bones from a three-rib roast, and roll. Put 1/2 cup olive oil in braising pan; when hot put in, roast and sear well on all sides. Remove seeds from three hot green peppers, and chop very fin with an onion, a clove of garlic and a little parsley. Put with meat a cupful of pitted olives cupful of claret, a pinch of paprika and a quart of stock; cover tightly and roast slowly one hour. Remove cove, add salt, cupful tomato and more stock if needed. Cover and roast another hour.
