One in a series of recipe advertisements put out by George Dauth to advertise his 9th Street Market. ⧉

Take a flank steak, score very deeply on one side and slightly on the other in the opposite direction. Make a stuffing as follows: One cup bread crumbs (fine), a scant tablespoon of parsley cut fine, teaspoonful thyme and marjoram mixed, a very little nutmeg, half teaspoon salt and half salt spoon pepper. Mix with tablespoon butter. Lay along center of the steak, roll and fasten with skewers. Put in earthen dish with pint of water and one small onion cut fine, and cook till brown and tender.
