One in a series of recipe advertisements put out by George Dauth to advertise his 9th Street Market. ⧉

Three sweetbreads, one egg and bread crumbs; put the sweetbreads into warm water for an hour to draw out the blood, then put them into boiling water and simmer for ten minutes which makes them firm. Drain them, brush over with the beaten egg, roll in bread-crumbs and dip in egg again, sprinkle with fresh bread-crumbs the second time, pour a little melted butter over them and put into a moderate oven to bake for three-quarters of an hour. Place the sweetbreads on toast and pour around them, but not over, a good brown gravy.
