Chicken Croquettes
To one three-pound chicken add one pair of sweetbreads, chop the meat and measure to one point of meat take one-half pint of milk, one large spoon butter, two tablespoons flour, one teaspoon chopped parsley, one teaspoon onion juice, one teaspoon salt, one-fourth teaspoon pepper, one-fourth nutmeg, a pinch of cayenne. Mix well, make into 14 croquettes, dip in mixture of one egg and one tablespoon of hot water. Roll in cracker crumbs and fry in hot fat.; To obtain best results with these Recipes the materials should be of the best quality. Dauth's Ninth St. Market deals in that kind only. ⧉
